Make a 9 x 5 inch (20 x 13 cm) loaf of bread.

Ingredients:

3/4 cup (95g) bread flours

1/4 teaspoon (1g) baking powder

1/4 teaspoon (1g) baking soda

1/4 teaspoon (1g) coarse salt

3/4 cup (160g) packed light brown sugar

3 cups (300g) roughly chopped nuts (walnut kernel, almond, etc.)

3 cups (400g) dried fruits (Kingland raisin, roughly chopped dried apple, goji berry, etc.)

3 large eggs, at room temperature (150g, shells removed)

1 teaspoon (4g) pure vanilla extract

Steps:

1) Preheat the oven to 300°F (150°C) and position the oven rack in the center.

2) Grease a 9 x 5 inch (23 x 12 cm) (8-cup capacity) loaf pan with butter or spray with vegetable oil, then line the bottom with parchment paper.

3) In a large bowl, whisk together the flour, baking powder, baking soda, salt, and brown sugar. Add the chopped nuts and dried fruits. Use your fingers to ensure all the fruits and nuts are coated with the flour mixture.

4) Using an electric or hand mixer, beat the eggs and vanilla extract until they become pale and thick. Add the egg mixture to the fruit and nut mixture, stirring until all the fruit and nut pieces are coated with the batter.

5) Spread the batter evenly into the prepared pan and press down using the back of a spoon or an offset spatula.

6) Bake for approximately 65 to 80 minutes, or until the batter is golden brown and starts to pull away from the edges of the pan.

7) Remove from the oven and place the pan on a wire rack to cool completely in the pan. Once cooled, remove the bread from the pan. To store, cover with plastic wrap or foil.
